Back when I was able to tolerate gluten, I was a huge fan of turkey wraps, banana and nut butter wraps, and pretty much anything that you could put into a tortilla. But since developing sensitivities to both gluten and then grains, my options seemed to get smaller and smaller. And while I love Siete’s grain-free tortillas and occasionally splurge on them, they can get pricy. So I decided to make my own. Enter this 2 ingredient paleo tortilla recipe that combines sweet potatoes and cassava flour into a delicious, nutritious paleo wrap that can be used for tacos, breakfast wraps and even my favorite – a good ol’ turkey and spinach wrap.

How to make Paleo tortillas

What is Cassava Flour?

Cassava flour is a grain free, gluten free and nut free flour that’s a very suitable replacement flour for wheat flour. Cassava is a tropical plant that is native to South America; it’s a root vegetable and is also referred to as yuca.  Rich in carbohydrates, cassava is a good 1:1 substitute for most flours containing gluten and is fairly easy to bake with.  This finely ground flour has a very smooth, almost powdery consistency that includes a number of minerals that perform important functions throughout your body. It’s suitable for paleo and Whole30 diets, and has been a wonderful addition to my grain-free toolbox!

Combining cassava flour + sweet potato

I love having recipes that include vegetables in the mix, so pairing cassava flour with sweet potato was an obvious, easy combination. I meal prep sweet potatoes most week, so this made it even easier! Notes on cooking your sweet potato are in the recipe below; while I haven’t tried it, cooking it in the microwave is an option if you are short on time.

Items that can be helpful in making paleo tortillas

  • A rolling pin can be used to roll the tortillas. I found that pressing them onto wax paper with my hand was the easiest.
  • Using a tortilla press is also an option, but it’d definitely not necessary.
  • Ghee is a great dairy-free option for frying that contains healthy fats and is paleo and Whole30 approved, too. Coconut oil will also work.

Instructions
  1. Roast sweet potatoes in a 400 degree oven for 45-60 minutes. Let cool, peel, and scoop innards into a medium bowl. Add in cassava flour & mix until smooth.

  2. Divide dough into 8 balls. Place in fridge for 15+ minutes. 

  3. Dust a clean surface and roll or press into tortillas. I found it easiest to use my hands to do this. If dough is sticky, sprinkle with additional cassava flour.

  4. Heat ghee/butter or coconut oil in a large skillet over low-medium heat. Cook tortillas 2-3 minutes on each side or until golden brown.

Recipe Notes

See video for preparation. Once you have mixed the cassava and sweet potato and rolled into balls, lay out a piece of wax paper. Spray generously with the Avocado Oil Spray. Roll ball in spray, and flatten with hands. 

Place hand under wax paper (and under tortilla) and gently place onto pan, peeling back wax paper to release tortilla onto pan to cook. Repeat.
