Each week I make and meal prep a few items to have on hand for simple and healthy items to grab when we are hungry. My kids need healthy snacks after school, and sometimes I need a quick pre- or post-workout healthy snack. I have recently stopped eating sugar, so I was on the hunt for something that I could eat; I wanted a sugar free cookie recipe that didn’t include any of those funky fake ingredients. This creation now has a place in my refrigerator weekly with good reason: these 3 ingredient cookies are incredibly easy to make, and satisfying at the same time.

Questions about 3 Ingredient Cookies (Paleo)

Do I have to use peanut butter?

No, you can absolutely sub peanut butter and use any nut butter. I typically make these 3 ingredient cookies with either cashew butter or sun butter since I personally can’t do peanut butter. Any nut butter should do fine.

What type of peanut or other nut butter should I use?

Because the bananas add moisture to the recipe, I would not use a very drippy nut butter in this recipe. I have had a lot of success with Justin’s Peanut Butter and Justin’s Cashew Butter as well as Spread the Love Organic Peanut Butter.

Can I add any other ingredients?

I have topped them with mini Enjoy Life Chocolate Chips (since these are Paleo-friendly chocolate chips). I’m sure you could mix in a few to the dough as well, or even put in a small handful of sunflower or pumpkin seeds if you desire. Of course they would no longer be 3 ingredient cookies, though;).

Do I not need any eggs?

Nope! This is an egg-free recipe.

Can I substitute the coconut flour?

Coconut flour is a grain free flour that is paleo friendly. I do not advise substituting the coconut flour as it does not work well subbing 1:1. If you were to use another flour, you would need to change the quantities.

How is this a sugar free cookie recipe if the nutrition facts show that there is sugar?
The sugar in this recipe is derived from the ripe bananas that are used. There are no added sugars, including refined, synthetic or anything of the sort in this recipe. All this said, there is 1 gram of natural sugar in each paleo cookie.

  1. Preheat oven to 350. Line a baking sheet with parchment paper.

  2. In a medium bowl, mash bananas with a fork. Add nut butter and coconut flour; mix to combine. Place 9 dough bites on the parchment paper and flatten into cookies. Bake for 13-14 minutes.

  3. Store in the fridge for up to 4 days.
