Healthy Homemade Reese’s Eggs (Nut-free Version)

Back in the day, I was a candy lover. All candy. Chocolate, chewy, you name it, I ate it. And pretty near the top of the list were Reese Peanut Butter cups. I mean, can you get any better than the chocolate peanut butter combo?! I think not!

Fast forward to today, and I cannot tolerate peanuts due to a food intolerance. Yeah, funny story how I found out – I was eating 2 tablespoons in the evenings after dinner (just because I loved it) and my stomach would get so big that I’d look like II was 5 months pregnant. Crazy! Anyhow, I still love the taste but needed to figure out how to make my own. So this recipe has a nut-free option that uses Sunbutter, or you can make them with cashew butter, almond butter, or even peanut butter. The ingredients are MUCH cleaner. Think 6 ingredients that are grain-free, gluten-free and dairy-free. Sure beats the ingredients in a Reese’s Peanut Butter Cup!

Creating the recipe for this copycat recipe for Reese’s peanut butter eggs was easy: I took my 3 Ingredient Paleo Energy Bites and tweaked them slightly, shaping them into eggs and topping them with chocolate. It’s amazing what a little maple syrup, vanilla and chocolate can do! 🙂 Honestly, the hardest part about these is getting them into the perfect egg shape. There are molds that you can buy that help out with this if you can’t quite get them perfect:

But what if I can’t eat nuts?

No nuts? No worries! I can’t do nuts either and I like making these with sunflower seed butter (or Sunbutter). If you just can’t do peanuts, I recommend cashew butter as it’s generally pretty creamy. If you are okay with peanuts, make sure to get an organic version to avoid pesticides.

How to store healthy homemade Reese’s eggs

These are definitely best stored either in the refrigerator or the freezer in an airtight container. If you keep them in the freezer, know that you will need to thaw them slightly before enjoying. I do not recommend leaving them out of the fridge as they will get soft. Sorry!

What type of chocolate should I use?

My favorites are Enjoy Life chocolate chips if you need allergy-friendly and dairy-free chocolate chips, or Lily’s – stevia sweetened, low carb friendly chocolate chips.

Ingredients
For the inside
  • 1 1/2 cups nut butter
  • 1/4 cup coconut flour
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil , melted
For the chocolate coating
  • 1 1/2 cups chocolate chips
  • 1 tsp coconut oil , melted
Instructions
  1. Mix all ingredients for the inside of the homemade Reese's egg in a bowl until well combined.

  2. Place in refrigerator for 30-60 minutes to let firm up. While this is in the fridge, line a baking sheet or large plate with wax paper.

  3. Using your hands or a mold, form into egg shapes and place on waxed paper. Place in freezer for 15 minutes.

  4. Once they are cold, heat chocolate and the 1 tsp of coconut oil in a microwave safe bowl for 30 seconds. If not melted, heat another 30 seconds.

  5. Dip eggs into melted chocolate and place on wax sheets.

  6. Place back in freezer for a couple of minutes.

  7. Remove and drizzle extra chocolate on top. Store in an airtight container.

Recipe Notes
  • If the inside of the egg mixture is too soft, add another tsp of coconut flour and mix. If still to wet, add another teaspoon and mix.
  • When dipping in chocolate, if the insides are too soft, place back in freezer for 10 minutes before proceeding to dip.
