Sausage, potatoes and peppers in a one-dish meal that's simple and sure to please.

  • 8-10 medium red potatoes cut into 1/2" pieces
  • 2 bell peppers sliced
  • 2 tablespoons avocado oil see notes - you can use olive oil if you don't have avocado
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • sausage links cut into pieces (I used 2 packs Belinski's Chicken Sausages)
  1. Preheat the oven to 375 degrees F. Combine potatoes pieces and bell peppers in a large bowl. Add oil and spices and mix to combine.
  2. Prepare a baking sheet by spraying with avocado or coconut oil. Spread peppers and potatoes on baking sheet.
  3. Bake for 15 minutes. Remove from oven and stir to help evenly cook vegetables. Bake for another 15 minutes. Stir again, and add sausage. Bake for 15 more minutes; test potatoes to ensure they are done before removing.
  4. Serve as is or atop greens for added vegetables.
