Chocolate chip cookies that are low in FODMAPS.

Ingredients
  • 5 TBSP unsalted butter
  • ¾ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups Jovial brand gluten free pastry flour
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 1 cup dark chocolate chips
Instructions
  1. Heat oven to 180°C/350°F. Line a baking tray with baking paper.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the egg and beat again until well incorporated and the mixture becomes thick.
  4. Add the vanilla and mix in.
  5. Sift all the dry ingredients together. Mix the wet ingredients with the dry.
  6. Add the chocolate chips and fold in.
  7. Roll the mixture into balls about the size of a ping pong ball and place on the tray. Flatten them a little.
  8. Bake for 12 minutes.
