Combine all dry ingredients for chocolate coffee energy bites in the stand mixer. Mix on low until combined.
Add wet ingredients, and mix until dry and wet ingredients are incorporated. Scrape down sides and mix again if needed.
Remove bowl and try to form a ball. Balls should stick together. If needed, add a bit more honey to make them stick.
Use a cookie scoop or eyeball them to be a similar size. Line placed energy balls on a piece of waxed paper.
