Ingredients
  • 5-6 apples tops hollowed out
  • 1 cup rolled oats
  • 1/4 cup raisins
  • 1/4 cup walnuts
  • 3 TBSP coconut oil melted
  • 2 TBSP maple syrup plus more if desired
  • 1 tsp cinnamon
Instructions
  1. Preheat oven to 350 F.
  2. In a medium bowl, mix oats, raisins, walnuts, coconut oil, maple syrup and cinnamon. Stir to combine. Hollow out the tops of the apples and place in a baking dish (see notes). Fill apples with oatmeal mixture, stuffing in as best as you can. Drizzle a few drops of maple syrup on top of oatmeal if desired. Loosely place a piece of foil over the tops of the baking dish and bake for 30 minutes. Remove foil and bake for another 15 minutes.
  3. Serve warm as is, or with a scoop of ice cream or a dollop of nut butter.
