Ingredients
  • 3 avocados pitted & smashed
  • 2 tomatoes diced
  • 1/2 large onion diced small
  • Juice of 1 lemon
  • 1/4 cup cilantro chopped
  • 1 teaspoon maybe more! salt
Instructions
  1. Slice avocados in half and discard the seed. Scoop the flesh out of shell with a spoon and place in bowl. Add juice of one fresh lemon immediately to prevent browning. Use a fork and mash to desired consistency.
  2. Add chopped onion, tomato, and cilantro. Stir gently to mix ingredients.
  3. Salt to taste. Stir just slightly, until incorporated.
  4. Serve with your favorite tortilla chips for a dip, or use with your favorite Mexican dish - examples included above.
