Ingredients
  • 1 1/2 cups oat flour gluten-free
  • 1 1/2 cups rolled oats gluten-free
  • 1 tsp baking soda
  • 1/4 cup coconut sugar
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/4 cup melted butter
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1/4 cup milk I used organic whole milk
  • 1/4 cup chocolate chips
Instructions
  1. Preheat oven to 375 degrees F. Prepare a baking sheet (I like to use parchment paper).
  2. Mix dry ingredients (oat flour, oats, baking soda and sugars) in a medium-sized bowl. Make a well (hole) in the middle and add melted butter, egg yolks, vanilla and milk. Stir to combine. Fold in chocolate chips.
  3. Place batter in the refrigerator for 15-30 minutes. Batter is somewhat wet - don't worry! Using a cookie scoop or spoon, scoop out rounded Tablespoon amounts of dough, roll them into balls and place them 2 inches apart on a baking sheet.
  4. Bake for 9-11 minutes. Let cool before enjoying.
Recipe Notes

I use a heaping 1/4 cup of chocolate chips:).
