A Paleo comfort food recipe that's perfect for a busy night dinners, Instant Pot Sloppy Joes is a family favorite recipe! This pressure cooker recipe generally uses a pre-made sauce, but here we use all real food ingredients to make a delightful sauce that comes together while cooking in the Instant Pot. And bonus - I explain how to make it a freezer recipe, too!

Ingredients
  • 2 tbsp olive oil
  • 2 lbs. ground beef (organic preferred)
  • 1/2 onion, chopped
  • 1 carrot, cut into small pieces
  • 3 stalks celery, cut into small pieces
  • 1/2 yellow, orange or red pepper cut into small pieces
  • 3 cloves garlic, minced
  • 1 can + 4 tbsp tomato paste
  • 1/4 cup apple cider vinegar
  • 2 tbsp dijon mustard
  • 2 tbsp honey
  • 1 tsp paprika
  • 4 tsp chili powder
  • 1 tsp salt
  • 2 cups water
Instructions
  1. Add oil to Instant Pot and press the Saute button. Add onion, carrot, celery, pepper garlic and beef and saute for 4-5 minutes. Press cancel button and drain extra fat. Be sure to use a hot pad as pot will be hot.

  2. Add remaining ingredients, place lid securely on top, and have valve set to "sealing" and press the Manual button. Adjust time to 10 minutes.

  3. After the cook time of 10 minutes, let it sit for 10 more minutes before manually releasing pressure. Remove lid and stir. Sauce will thicken more with time.
