  • 1 cup nut butter (I used SunButter, but use nut butter of choice)
  • 1/4 cup coconut oil , melted
  • 2 tsp vanilla extract
  • 2 tbsp maple syrup
  • 2 tbsp coconut flour
  • 1/3 cup chocolate chips
Chocolate topping
  • 1/3 cup chocolate chips
  • 1/2 tsp coconut oil
  • 1-2 tbsp Himalayan salt chunks
Instructions
  1. Line a mini muffin tin with liners. In a medium bowl, mix nut butter, coconut oil, vanilla and maple syrup. Add coconut flour and mix to combine. Gently mix in 1/3 cup chocolate chips.

  2. Fill muffin liners with base layer.

  3. Heat 1/3 cup chocolate chips with 1/2 tsp coconut oil for 30 seconds in the microwave. Mix and reheat another 15 seconds if needed; mix until melted and reheat if needed working in 15 second increments.

  4. Add a bit of the chocolate layer to the already-filled muffin liners to top. Sprinkle salt on tops of chocolate and place in freezer for a minimum of 30 minutes before enjoying,
