A delicious gluten free dessert that uses fresh peaches topped with a grain-free topping that’s both paleo and vegan. This tasty grain free peach cobbler is simple to make, and full of nutritious foods! It’s the perfect summer dessert that’s healthy, nut-free and dairy-free.

Ingredients
  • 2 lbs. peaches , peeled and sliced (about 6-7)
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 2 tbsp arrowroot flour
For the cobbler topping
  • 1/4 cup coconut oil , melted
  • 2 tbsp dairy-free milk
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1/2 cup cassava flour
  • 2 tbsp coconut flour
  • 1/2 tsp baking powder
Instructions
  1. Preheat oven to 375 degrees F. Coat an 8 x 8 baking dish with avocado or coconut oil spray. In a large mixing bowl, combine peaches, lemon juice, vanilla and arrowroot.

  2. In a separate small bowl, combine melted coconut oil, maple syrup, dairy free milk, 1 tsp vanilla extract, cassava and coconut flours and baking powder. Mix with a fork; topping will smush together somewhat.

  3. Add peach mixture to prepared baking dish. Take pieces of the topping mixture, flatten with your hands, and top the peaches with it. Try to cover as much of the peaches as you can.

  4. Bake in preheated oven for 25-28 minutes or until topping is starting to turn golden brown. Serve warm.
