A healthy seasonal recipe, skillet root vegetables combine simple ingredients of root vegetables into a cast iron pan for a nutrient-dense dish that's suitable for Thanksgiving, or anytime you are seeking a comforting, healthy dish.

Ingredients
  • 2 tbsp avocado oil
  • 1 medium sweet potato , cubed
  • 1/2 red onion , cut into cubes
  • 3 cups butternut squash cubes
  • 1 delicata squash , cut into 1/2" pieces
  • 1/2 -1 tsp salt
  • 1/2 tsp thyme
  • 1/2 tsp rosemary
Instructions
  1. Preheat oven to 400 F (Roast).

  2. Place cut vegetables into a bowl and add oil. Add spices and salt. Mix to combine. If vegetables are not coated, add one more TBSP avocado oil.

  3. Place in preheated oven for 20 minutes. Using hot pads again, remove and stir vegetables. Heat for another 15 minutes and check for doneness. Let cool before serving. Add fresh rosemary to final dish if desired.

Recipe Notes

*Sub melted coconut oil for avocado oil if desired.
