A recipe for grain-free sweet potato pancakes that's chock-full of healthy real foods. These flourless pancakes are made with sweet potatoes, banana, eggs, flaxseed and coconut flour - the perfect paleo breakfast or pancake option for those who don't eat grains.

Ingredients
  • 2 cups cooked sweet potato
  • 1 banana , mashed
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 2 tbsp ground flaxseed meal
  • 6 tbsp coconut flour
  • 2 tbsp coconut oil
Instructions
  1. Mix all of the ingredients in a bowl aside from coconut oil.

  2. Add some of the coconut oil to a pan and heat on medium until melted. Add batter to form pancakes - batter will be thick so you will have to work with it (I use a for for this).

  3. Cook for 2-3 minutes on low-medium heat per side. Pancakes are delicate, so handle with care.

  4. Serve warm with desired toppings.
