A healthy morning glory muffin that's made with no grains. If you like sugar, this is not for you. But if you want a healthy flaxseed muffin that's full of fiber and healthy fats, you've come to the right place! Just 8 ingredients plus spices make up this easy grain free muffin recipe.

Dry Ingredients
  • 1 1/4 cups ground flax seed
  • 1 tbsp coconut flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp ginger
  • 1/4 tsp salt
Wet Ingredients
  • 4 eggs
  • 1/3 cup coconut oil , melted
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla
  • 1-2 tbsp maple syrup
  • 1/3 cup carrot , grated (about 1 large)
  1. Preheat oven to 350 degrees.  

  2. In a medium sized bowl, mix dry ingredients.

  3. Add wet ingredients and mix to combine. Fold in add in's. Let mixture sit for 2-3 minutes to allow flax to thicken. During this time, line muffin tin with muffin liners.

  4. Bake 18-20 minutes.

  5. Let cool before enjoying.

Recipe Notes

These keep well in the refrigerator for up to 1 week, or freeze them in an airtight container for up to 3 months.
