An easy recipe for gluten free bread pudding that's a dairy free recipe, too. Use gluten free bread, eggs, and just a few other ingredients to bake a delicious comfort food breakfast that's suitable for those with food sensitivities or food allergies. A perfect gluten free brunch recipe or delicious for holidays, too.

  • 4 cups gluten-free bread cubed
  • 4 eggs
  • 1 can light coconut milk
  • 1/2 cup coconut sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/3 cup raisins
  • 1/3 cup pecans
  1. Preheat oven to 350 degrees F. Spray a 9x9 dish with coconut or avocado oil (see notes).
  2. In a large bowl, whisk eggs and then add coconut milk, sugar, cinnamon, vanilla, raisins and pecans.
  3. Gently add in bread and mix to combine. Add mixture to prepared dish.
  4. Bake 45-50 minutes, until top is set and peaks of bread are lightly golden brown. Serve warm or even chilled.
