I’m always on a hunt for simple and satisfying foods to have on hand for my kids, either for lunch box throw-ins, or for after school snacks. If you’re a parent, I’m sure I need not explain the all-too familiar scenario of the night before school when you’re scrambling for healthy foods to package with love, or to toss into a box, depending on the day (or the mood, for that matter). And somehow hunger always strikes after school, too. But before you succumb to the bags of packaged products that your kids may be longing for, let me introduce these moist and filling goodies that contain a secret ingredient that you and I can keep a secret. Shhhh!! If you don’t tell, I won’t either.

Chocolate Black Bean Blender Muffins – a healthy gluten free snack.

Packed with protein and no refined sugars, these gluten free black bean muffins are sure to satisfy every appetite, from kids to adults, and everyone in-between. By adding just a smigin of chocolate chips (4-5 for those who are counting on the pics), your kids will be even more drawn to these tasty treats that pack a powerful punch. Oh, and did I mention that they can be prepped in a whopping 10 minutes? And that you’re likely to have all of the ingredients on hand? Now that’s my kinda recipe!

I make these in my Vitamix (which I LOVE and highly recommend), but I’m sure that you can make them in most blenders or possibly even a food processor.

Ingredients
  • 15 ounce can black beans rinsed and drained (organic if possible)
  • 3 eggs
  • 1 ripe banana
  • 1/3 cup honey
  • 1.5 teaspoons vanilla extract
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ cup rolled oats*
  • few chocolate chips on top of each I prefer Enjoy Life brand*
Instructions
  1. Preheat oven to 375 degrees. Line a muffin tin.
  2. Place all ingredients in a blender and blend until smooth. Fill each of the muffin cups close to the tops, until all of the batter is used up.
  3. Bake for 17-18 minutes, until a toothpick inserted in the middle comes out clean.
Recipe Notes

My favorite chocolate chips are Enjoy Life because of the minimal ingredients included.

One note – be sure to press down on the chocolate chips. No one likes chocolate chips that escape the muffin! While they still taste good, it’s not quite the same effect. I love having these on hand for healthy snacks for the kids, any time of the day. They come together in under an hour and are packed with healthy, unprocessed ingredients. I really hope you love these as much as my family does!
