Healthy Edible Cookie Dough
Who ever thought that you’d have the word “healthy” in the same title as cookie dough??! Not me! But since this is made with chickpeas and simply sweetened with dates, it’s got minimal real food ingredients and packs a punch with the added protein. Bonus: you’ll get a nice dose of fiber in there, too. I mean, do you need any more reason to dive in?!
Easy substitutes for this Vegan Chickpea Cookie Dough
- Make it nut-free by using Sun Butter
- Keep it sugar-free with these sugar-free dark chocolate chips
- Don’t want to use dates? Start with 1/4 cup of maple syrup. Process and taste and adjust sweetness as desired.
- If you prefer to use a blender, use a high-speed blender instead of a food processor.
How to enjoy this vegan chickpea cookie dough:
Get out a spoon and dive in. Seriously! I mean, it shouldn’t be that complicated.
Buuuut if you want to change things up, roll these into balls and top a smoothie bowl with them. Mix them into some homemade ice cream or “nice cream” (ice cream made with bananas). Or add them to a banana split.

- 1 can garbanzo beans , rinsed and drained
- 1/2 cup nut butter
- 1 tsp vanilla extract
- 6 dates , pitted
- 3 tbsp dairy-free milk (add 1 tsp more for creamier texture)
- 1/2 cup dairy-free chocolate chips

Add all ingredients aside from chocolate chips to a food processor or high-speed blender. Blend, scraping the sides occasionally, until desired texture is achieved. Add 1 tsp dairy free milk to adjust creaminess if desired.

When smooth, fold in chocolate chips. Store in fridge for up to 5 days
