Sometimes things work out easily. Like this easy broccoli cheddar soup recipe. I had no intentions of making it, let alone sharing it – but then we got this super cold weather, and I had a hankering for soup. My kids love warm delicious bowls of soup, and so do I … especially when it’s cold out. And though I can’t do dairy, the rest of my family can. So I made myself some of my favorite carrot soup in my Instant Pot, and I made the family this kid-friendly broccoli cheddar soup that’s now going on permanent rotation in our house. It should be in yours, too:).
About the easy broccoli cheddar soup recipe
Soups are wonderful for getting in lots of healthy vegetables, and this healthy broccoli soup does just that. If you like your soup a little brothier, feel free to add a bit more in, as this version is somewhat thick. I added in a can of white beans to add a pop of protein, and a carrot for some more color and another vegetable. It’s funny how when my kids have soup they never really notice the veggies, right? Not like anyone complains about broccoli or anything, but I sure do feel good when they get in a hefty dose of the green!
And to confirm that it’s a kid-friendly meal – my toughest critic, my pickiest eater (who also happens to be 12) gave it a 9.5/10. HUGE mom win!
A kid-friendly broccoli cheddar soup that combines minimal ingredients with lots of flavors, altogether in a delicious, nutritious one-pot meal.
- 2 tbsp olive oil
- 1/2 onion, diced
- 1 carrot, cut into pieces
- 6 cups broccoli florets
- 1 can white beans, rinsed and washed
- 3 cups chicken broth
- 2 cups milk (I use whole milk)
- 2 cups cheddar cheese, shredded
- salt & pepper to taste

Heat oil in a large soup pot. Add onion and carrot and saute 3-4 minutes.

Add broccoli, beans, broth and milk. Stir to combine. Cook until simmering, turn down and cook 20 - 25 minutes, or until broccoli is tender, stirring occasionally. Add salt & pepper as desired.

Turn off heat and break broccoli apart with the back of a wooden spoon. Add cheddar cheese; mix and let melt in. Serve immediately.

broccoli cheddar is one of my favorites, and one the very few ways I can get one of my kiddos to actually eat it! Love the beans!
I love having beans in there, too. My kids have always been fans of broccoli cheddar soup, I just didn’t know how easy it was to make! So glad it’s on our regular rotation now! 🙂

Hmmm … I honestly don’t know since I haven’t tried it. I think that canned coconut milk could work, but there is still cheddar cheese so it’s not going to be dairy free – not sure if that’s an issue. Let us know if you try it!
One thing I do with broccoli soup, is use add the broccoli stem and use hand blender to puree. You get so many nutrients from the stalk as well as florets.
Yes, another great suggestion. So much of the nutrition is in the stem!
