Healthy Paleo Zucchini Chocolate Chip Muffins (GF, DF, Paleo)
I love baking. There’s something so therapeutic about it, and I love having baked good on hand afterwards for me and my family. When I went grain free almost two years ago, I thought baked things were a thing of the past. Lucky for me, I was wrong! With a little practice and learning, I’ve learned to love baking with coconut flour and cassava flour. These Paleo Zucchini Chocolate Chip Muffins are grain free, gluten free, dairy free but not free of taste! I’ve been enjoying them with a cup of coffee in the morning, and even as an afternoon snack. Here’s more about this new recipe, why I like it, and how to make them.

A healthy version of zucchini muffins that are baked with coconut flour, eggs, shredded zucchini and some chocolate chips. The perfect healthy breakfast or snack!
- 6 eggs , beaten
- 1/3 cup applesauce (unsweetened)
- 1/3 cup melted ghee or sub coconut oil or butter
- 2 cups shredded zucchini about 1 1/2
- 3/4 cup coconut flour
- 1/2 cup coconut sugar
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/3 cup chocolate chips

Preheat oven to 350 degrees. Line a muffin tin with liners.

In a medium bowl, mix eggs, applesauce, melted ghee (or coconut oil or butter) and zucchini. In a separate bowl, mix coconut flour, coconut sugar, baking powder and cinnamon.

Add dry ingredients to wet. Mix to combine. Fold in chocolate chips. Fill muffin liners and bake for 35 minutes. Let cool before enjoying.
Do I need to add chocolate chips?
Well technically, no! I do think this brings up the excitement factor just a bit, but you could also substitute raisins or even sunflower seeds, walnuts or pecan pieces if you prefer. If you need allergy-friendly chocolate chips, Enjoy Life Chocolate Chips are dairy-free and almost always in my pantry. Lily’s Chocolate Chips are great it you are keto, too.
Can you substitute another flour for coconut flour
Not really. Coconut flour is very absorbent. Because it’s a grain free flour, it generally can’t be substituted on a 1 : 1 basis. You’ll require more liquid, sometimes more eggs, and I have found that it was initially easier to work with established recipes until getting a feel for how coconut flour works. This said, I’ve been baking with it for years and am very fond of the texture. I also don’t feel that the coconut flavor is very strong.
Can I freeze these Paleo Zucchini Chocolate Chip Muffins?
Yes! Simply bake and cool and store in a freezer-friendly container or bag. These are my favorite reusable silicone food storage bags. No plastic needed!
