Paleo Sausage Balls (Keto & Low Carb)
I used to make my husband sausage balls. You know, the kind that had Bisquick in it. That was back in the day before I was gluten free (and grain free) and before we really knew too much about what it means to be healthy. I’d buy the box of Bisquick, make these yummy appetizers for him, and never use the box again.
Flash forward – I’ve since wisened up about what I feed my family, and I still love to have some of the classics. So I made a version of paleo sausage balls. They are Keto and low carb (even though we don’t follow those diets) and they are also grain-free, since they are made with almond flour and coconut flour. They are perfectly poppable and just the thing for pot-lucks, gatherings, football season, etc.
Helpful items in making paleo sausage balls:
Cookie scoop – This cookie scoop makes making these sausage balls, any meatballs, and most cookies soooo much easier. No more trying to make sure that they are all the same size, which means easy, even baking.
Baking sheet – I invested $14 in this baking sheet 9 years ago and haven’t looked back. It’s sturdy, a large size, and doesn’t warp easily. I highly recommend it!
Cooking spray – Ditch the Pam – it’s made with propellants butane and propane. Though it’s controversial whether the amount within causes a toxicity risk, I’d rather not take the chance! Instead use Chosen Foods Sprays, which contain absolutely no propellants, chemicals or emulsifiers.
Almond flour- Make sure to get almond flour and not almond meal, as the texture will be much different. Using almond flour with coconut flour makes these gluten-free, grain-free, paleo and keto.
Tips on making keto sausage balls
- Mix cheese and sausage first. If you are having a tough time combining, simply put both in a microwave-safe bowl, and heat in the microwave for about a minute. This will heat the cheese enough to help it mix in. Add remaining ingredients afterwards.
- Be sure to generously spray your pan well or these will be a big sticky mess. I actually like to line my pans with aluminum foil – I know, not great from the heavy metal standpoint – but I do like this since it makes for MUCH easier of a cleanup. You will still need to spray the foil should you choose to use it.
- Follow ingredients below carefully. This recipe calls for 1/3 PLUS 2 TBSP of coconut flour. If you forget that extra 2 TBSP, they won’t hold together as well.
- Yes, it’s elementary … but I do love serving these with ketchup for dipping. So old school but soooo good!
Make them dairy-free (and Paleo!!)
It’s easy to make these Paleo sausage balls OFFICIALLY Paleo (by making them dairy free) by simply using your favorite dairy-free cheese. We’ve used Daiya and So Delicious dairy-free cheeses with success. Now realistically they don’t taste exactly like the ones with “real” cheese, but they definitely can work!

- 2 lbs sausage
- 16 oz. shredded cheddar cheese
- 2 cups almond flour
- 1 cup + 2 TBSP coconut flour
- 1 tsp salt
- 1 tsp baking powder

Preheat oven to 425 degrees F. Line a cookie sheet with aluminum foil and generously spray it with oil (I use coconut oil or avocado oil spray).

Mix all ingredients in a large bowl. If you have an issue combining the cheddar cheese within, heat sausage and cheese in the microwave for 1 minute and then combine remaining ingredients,.

Using a cookie scoop, form into 1 inch balls. Line up on cookie sheet.

Bake at 425 for 23 - 25 minutes. Let cool and serve warm.
