Dairy-free Instant Pot Mushroom Risotto
Calling all Instant Pot fans or anyone who is tired of slaving over the stove while making risotto! I have the perfect answer for you, and it down’t involve sitting around and stirring … it involves one of my favorite kitchen appliances – the Instant Pot! Now if you’ve been a reader for a while, you know I love this 7-in-1 device – I break down 6 ways that I use my Instant Pot and also have recipes including Sloppy Joes, Chicken Tikka Masala and yummy soups including a delicious carrot soup. This is a new favorite side dish that’s perfect for busy nights!
Steps to make Dairy-free Instant Pot Mushroom Risotto:
- Cut up your vegetables and get out the other ingredients (never mind the apples in the back of this picture, lol!
2. Press saute on your Instant Pot, add oil, garlic and onion and cook for 1 minute.
3. Next come the mushrooms (and a bit more stirring!) and a few minutes later, the arborio rice, spices and broth.
4. After a quick 6 minute cook on “manual”, once the pressure is released, you simply add greens and let the heat wilt them and you are ready to serve! Add some black pepper and adjust salt to your desire.

What goes with mushroom risotto?
To keep this a vegetarian meal, serve with a side salad, tofu or roasted vegetables.I like to serve this with a fish, such as sea bass or swordfish, or it’s an easy one to add simple chicken to. In fact, I take shredded chicken that is meal-prepped ahead of time and mix it into this for my husband. That makes an all-in-one dish that’s a great leftover for lunches the following day!
Is risotto healthy?
Typically risotto has parmesan or some type of grated cheese in it, and sometimes melted butter. But, you don’t need dairy to make a creamy risotto. By making it in the Instant Pot, all of the work is basically done for you, and the end result is a moist, delicious comfort food.
What if I don’t like mushrooms?
Believe it or not, that’s ok in this recipe!! Try this with zucchini or even zucchini and cauliflower. Yum!
A risotto recipe with no wine?
Yep! No wine here. Simply deglaze with water – feel free to use white wine if you prefer, though!
Do I need to use arborio rice for risotto?
Arborio rice is a starchy short-grain rice and the classic choice for risotto. Risotto is a north Italian rice dish which has a characteristic creamy consistency – this type of rice is an integral part of the recipe. Don’t worry – if you buy a box, I’m pretty sure you’ll make this over and over again!

- 4 tsp oil I use avocado oil
- 1/2 onion , chopped
- 6 cloves garlic , chopped
- 6 cups mushrooms , cut into pieces (white, shitake, portabella, oyster or a mixture)
- 2 tbsp water
- 1 tsp salt
- 1 tsp thyme
- 1 tsp rosemary
- 1 tsp onion powder
- black pepper to taste
- 4 cups arborio rice
- 4.5 cups broth chicken or vegetable, I suggest low sodium or homemade
- 2 cups greens spinach, kale, mixed greens

Press the Saute button on the Instant Pot. Add 3 tsp oil, garlic and onion and saute for 1-2 minutes.

Add mushrooms and last tsp of oil. Cook, stirring often, for 1 minute. Add 2 tbsp water and keep stirring - cook for 2 more minutes.

Add spices, rice and broth. Hit cancel. Place lid on pressure cooker with the valve sealed. Press Manual and adjust cooking time to 6 minutes on high.

Once cooking time has finished, hit cancel. Let sit for 5-10 minutes and manually release pressure. If it's too high right away, give it a couple of minutes before trying again. When pressure is down, open the lid and add greens. Mix in with a spoon; because the risotto is hot, it will help wilt the leaves. Mix and top off with black pepper to taste. Add a pat of butter for additional creaminess - optional.
To make this vegan, use vegetable broth.
