Paleo Chocolate Sweet Potato Muffins
Ingredients in Paleo Sweet Potato Muffins
Nothing but simple, real ingredients in these grain-free muffins. They are pretty interchangeable (meaning you can make substitutions) and most likely you’ll have these ingredients in your pantry!
- Roasted, mashed sweet potato
- Eggs
- Maple syrup
- Almond butter (sub any other nut butter)
- Vanilla extract
- Cocoa powder (sub cacao powder if you please)
- Almond flour
- Baking soda
- Cinnamon
Why I love sweet potato muffins
These muffins are a combination of a few things for me: they include sweet potatoes (clearly I’m a fan), they are grain-free, they are full of healthy real foods, and they have healthy fats within. And on that note – let’s talk macros: these grain-free chocolate muffins have 12 carbs, 5 grams of protein and 10 grams of fat. They are satiating and will keep you full, for sure.
But text-book info aside—these are just good! You know how some chocolate muffins made with processed ingredients are … they look good but the after eating them – ughhhhhh! You don’t feel good! These are not the same. You can eat them and feel good about them.
I personally like them in the morning with tea or coffee, but I’ve been sending them in my kids lunches as well. They are also great for those car rides from school to activities – mom tip!
How to I make healthy paleo sweet potato muffins?
Friend, it doesn’t get much easier than this. Mix your wet ingredients. Then combine your dry ingredients. Put them into baking cups (in a muffin tin) and voila. Sit back and wait 20 minutes for these babies to be done!
Cocoa powder or cacao powder?
So I first tried making these paleo muffins with cacao powder because I love it. Cacao powder is higher in fiber, protein, magnesium and iron, making it more nutritious than cocoa powder. This is all based on processing. Both come from the cacao bean, but cocoa is more processed—hence cacao being more nutritious. Much of the nutritional value is stripped away in processing, and oftentimes other additives are included.
However, cocoa powder is cheaper and gives a slightly different taste (my opinion) even if you use unsweetened cocoa powder.
My kids did not like this recipe with cacao powder, so instead I used unsweetened organic cocoa powder. Feel free to try with either.

- 1 cup mashed sweet potato
- 1/2 cup almond butter
- 1/4 cup + 2 tbsp maple syrup
- 3 eggs
- 1 tsp vanilla
- 1/2 cup unsweetened cocoa powder
- 3/4 cup almond flour
- 1 tsp baking soda
- 1 tsp cinnamon

Preheat oven to 350 degrees F. Line muffin tin with baking cups.

In a medium-sized bowl, add wet ingredients and mix to combine.

Add dry ingredients and mix until wet and dry ingredients are combined.

Fill baking cups about 3/4 of the way full. Top with optional chocolate chips.

Bake 18-20 minutes. Let cool and enjoy.
Store in an airtight container in the refrigerator for up to 4 days.
Make ahead and freeze for an easy lunch throw-in.
