Want pancakes but can’t eat grains or gluten? Here’s a recipe for grain-free sweet potato pancakes that’s chock-full of healthy real foods. These flourless pancakes are made with sweet potatoes, banana, eggs, flaxseed and coconut flour – the perfect paleo breakfast or pancake option for those who don’t eat grains.
Healthy Grain-free Sweet Potato Pancakes
I don’t need to sell you on pancakes. I know that already since you’re here. Plus who doesn’t love a good comforting breakfast food?
So here’s the thing – these are not your typical pancakes – as in they aren’t full of fluffy white flour that expands and stays moist on the inside. Nope, instead these are made with tasty real foods like sweet potato, banana and eggs – so yes, they’re actually good for you. Who’s down?! Oh and our little secret – serve these up with your favorite toppings and your kids will never know that they are getting both fruits AND vegetables in their pancakes! Total mom win!!
Ingredients used to make grain-free sweet potato pancakes:
- Sweet potato – this is a big part of the pancake itself. I like using Japanese sweet potatoes because of their consistency, but any of them will work. Make sure to cook them first and remove the skin.
- Banana – the banana adds sweetness and moisture. Make sure it’s somewhat ripe.
- Eggs – I like adding eggs to these to up the protein factor in these pancakes, and also for a binder.
- Ground Flaxseed – flaxseed also helps with binding, while adding some fiber, too.
- Coconut Flour – one of my favorite grain-free flours, coconut flour helps bind these pancakes and also adds healthy fats.
- Spices & Flavorings – this one is pretty self-explanatory!
How do you make pancakes from scratch without flour?
Easily! You use grain-free flours like coconut flour but you also need binders within. I think the more appropriate question for this recipe is how do you get fruits and vegetables into a pancake batter;).
Flourless pancakes and a grain-free life:
In addition to combining sweet potatoes, bananas and eggs, the use of flaxseed and coconut flour create enough of a bind to hold these flourless pancakes together.
But wait – isn’t Coconut flour a flour? Coconut flour is a soft flour made from dried coconut meat. First coconut milk is squeezed from coconut meat, and then the meat is dried at a low temperature and ground into a flour which is suitable for baking. It’s one of my favorite grain-free flours and I use it in everything from sausage balls to these tasty paleo blondies. It’s been a life-saver for me not eating grains.
Tip before the recipe:
These pancakes are fragile. Use caution in flipping them. They stay soft on the inside, but will brown on the outside. If you find them too fragile, try adding 2 more tablespoons of ground flaxseed to the batter.

- 2 cups cooked sweet potato
- 1 banana , mashed
- 4 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp ginger
- 2 tbsp ground flaxseed meal
- 6 tbsp coconut flour
- 2 tbsp coconut oil

Mix all of the ingredients in a bowl aside from coconut oil.

Add some of the coconut oil to a pan and heat on medium until melted. Add batter to form pancakes - batter will be thick so you will have to work with it (I use a for for this).

Cook for 2-3 minutes on low-medium heat per side. Pancakes are delicate, so handle with care.

Serve warm with desired toppings.
